Snowy day pancakes

It is a beautiful snowy day in East Tennessee. The kids are out of school and begging for pancakes. There's just one little problem: we're out of pancake syrup. Not letting that deter, we explore the cabinets for ingredients. After all, how difficult can it be? With some creativity (and a little taste testing) we unveil our soon to be famous mixture!

Perfect Pancake Syrup

1 cup packed light brown sugar
1 cup water
1/2 cup light corn syrup
1/2 t. maple flavoring
1/2 t. pure vanilla extract
1/4 t. salt
1/4 t. cinnamon

Mix all ingredients together in a saucepan and bring to a boil over medium heat. Boil for three minutes and remove from stove top. Let cool. Syrup will thicken as it cools. Store in an airtight container.

  1. cool! I remember Ramona making syrup for Tom every time, too, but I've never seen a recipe for it. I think the cinnamon adds a nice, subtle flavor.
